Be careful when you make the announcement of this dish on your food menu list. Nobody can get enough of leek and spinach soup. Spinach in a 100 g serving provides only 23 calories, spinach has a high nutritional value, especially when fresh, frozen, steamed, or quickly boiled. It is a rich source 20% daily value of vitamin A, C, B and K, magnesium, manganese, foliate and iron.

Chopped spinach in a bowl and grated cheese in another bowl and assembles small batches of the soup as needed. If you are serving a lot of people at once, you can add all of the spinach to the leek broth, but be sure to keep the rice or pasta separate it will soak up all of the broth after a night in the fridge. Serve this soup with rice over pasta, but use what you like.

  • Kosher salt and pepper to taste
  • Freshly grated cheese
  • Lemon (optional)
