Putting food into oil that isn't hot enough for frying will only leave you with a soggy, sodden mess. Oil must be very hot before you put in the food you intend to fry.

To check if the oil is hot enough, put a wooden spoon in it. If the oil starts to bubble around the wood, then it is hot enough and you can put in your food to fry.
