1. Heat the oil in a pan for a minute, but don't bleach. Sauté the chopped onions till fragrant and translucent.
2. Add in crayfish, stew, salt, maggi and smoked fish. Cook on medium heat for 10-15 minutes.
3. Peel and cube the potato and one plantain. Grate the other plantain.
4. When the sauce is cooked, add in the plantains and potato and combine with the sauce. Add some water and allow to simmer for about 30-40 minutes until plantain is cooked and soft.
5. Turn off heat and add chopped vegetables and shrimps if using.
Serve with more fish!
