I am a documentary filmmaker by occupation and a foodie by passion and when I am not on the field shooting a documentary, you will find me in the kitchen whipping up some crazy delicious meals, just like the one I have for you today.Today I am making baked fish with hot and spicy pawpaw sauce and for this menu, you will require the following ingredients:

1 fresh croaker fish1 Ripe peeled and deseeded Pawpaw (papaya)1 Lemon1 small piece of ginger Some scotch burnets ( Ata rodo)Some potatoes to make chipsSome coconutApple cider vinegarvegetable oilUgu leaves

And to marinate the fish, you need some homemade bbq rub which consists of Powdered garlicPowdered Cameroonian pepperSome seasoning cubesSaltVegetable oil

Method:1. Gut and wash your croaker fish and season it with the dry homemade bbq rub.

2. If you wish you can rub some oil on the fish so that the rub will stick on it.

3. Coat the fish with about half of the lemon to add some tang to it.

4. Crumble some of the Ugu leaves around the fish.

5. Wrap it in foil paper and pop it in the over at 200 degrees celsius for 20mins-30 mins.

6. Put the pawpaw in a food processor, add some lemon juice, a teaspoon of apple cider vinegar and some vegetable oil and blend until it turns liquid smooth.

7. Put your pan on fire

8. Add two tablespoon of vegetable oil and let it heat up

9. Add your chopped scotch burnets and chopped onions

10. Grate some ginger and add the onion and peppers

11. Add a few drops of lemon

12. Add some salt

13. Sautee this for a few minutes making sure not to get it burnt

14. Pour the blended pawpaw mixture

15. Add a tablespoon of honey and cook for 5 minutes

16. Reduce the heat and grate in some coconut

17. Let it simmer for 2 minutes then turn off the burner

18. Peel and slice up your potatoes and fry them and set aside

19. Bring out your fish after it has fully baked in the foil for 20-30minutes and plate up your dish and garnish with some grated coconut.

It is easy and delicious I tell you.You will be itching to make this meal for someone.
