Pineapple and chilli mint salad

Pineapple is a great source of vitamin C. I read up on it and found out that it is great for your heart, helps with healing and it is also among those foods that improve fertility. While it is not your magic-wonder-abracadabra-poof-here’s-a-new-you type of fruit (I doubt if anything like that exists), you are definitely giving your body a whole lot of goodness when you include it in your diet on a daily basis.

There are many ways to enjoy pineapple; you can have it as a snack which is way healthier than the “other” stuff you would normally reach for. You can make a fruit salad. Just add pawpaw, oranges, grapes and mangos or strawberries if you can get your hands on those. Some people add pineapples to their kebabs. Putting pineapple on my shrimp kebab is a personal favorite. But if like me, you want something a little bit different or you want to serve it as a dessert but want to show your guests you made some effort in preparing it, then this simple but great tasting pineapple and chili mint salad hits the spot.

Tips:For those who are on a diet, you should know that a cup of fresh pineapple chunks contains approximately 82 calories, 0 grams of fat, 2 mg of sodium, 22 g of total carbohydrate (including 16g of sugar, 2.3g of fiber) and 1g of protein. You can substitute scent leaf (efirin) for mint as it is also in the mint family [more like cousins] just note that scent leaf can be overpowering so watch the quantity you put in.
