How to make crunchy Yamarita fries
Yamarita is a delicious Nigeria delicacy made by frying egg coated yam.

Unlike the usual fried yam, yamarita is an egg-flour coated fried yam which makes it crunchy and sweeter (my opinion).
Yamarita, unlike dun dun (fried yam, which is often sold by the roadside is commonly sold in restaurants and mostly served with well-fried sauce or ketchup in some cases.
My first encounter with yamarita had me wondering what makes it so different from the roadside fried yam. Now that I know, yamarita has become one of my favourites as I can make it easily any day anytime.
Ingredients
1. Yam
2. 1 egg
3. 3 Tsp flour
4. Salt to taste
5. Seasoning cubes
6. 1 Tsp cayenne pepper (dry pepper)
7. Curry powder (optional0
8. Cooking oil
Preparation
1. Peel the yam, wash and cut into thin rectangular slices.
2. Add salt to taste and boil the yam until it is soft. Drain the water and keep it aside.
3. In a medium sized bowl, mix the flour, dry pepper and curry powder together.
4. In another small bowl, whisk the egg.
5. Dip the yam slices in the flour mixture. Make sure the yam is covered in flour.
6. Dip each slice in the egg (one after the other) and be sure to dip the entire slice in it.
7. Heat up some vegetable oil in a non-stick skillet and deep fry all the yam slices on minimum heat.
There you go.
Serve and enjoy your yamarita.
