Pancake Recipes For The Non-Pancake Lovers

I was thinking about you non-pancake lovers the other day and it occurred to me that maybe you need to experience the greatness of these beauties in a different way.

As strange as it might be to us Pancake Lovers, there are people on this planet who do not actually like pancakes *tears*.

I was thinking about you non-pancake lovers the other day and it occurred to me that maybe you need to experience the greatness of these beauties in a different way.

I have two recipes for you that are still “pan-cakes” as they are cooked in pans but are different in texture and taste when compared to regular American pancakes.

1.Japanese Style Pancakes

This approach gives you soufflé like pancakes….super tall, soft and fluffy. They are perfect for dessert as they are really light and intense when it comes to soaking up flavors of fruits and syrups.

We don’t want to stress you so yes, you can use the box mixes from the store. Hopefully you like it *fingers crossed*.

Recipe

Tool: Ring mold/ mini cake pan (found in baking section of supermarkets)

Ingredients

2 large eggs

1/4 cup sugar

1/2 cup milk

1 cup pancake mix

1/2 stick butter

1 teaspoon baking powder

1 Tablespoon full fat mayonnaise

2 Tablespoons vegetable oil

Method

  • Blend eggs, butter, milk, mayonnaise & sugar on low speed for 10secs
  • Add baking powder & pancake
  • Heat frying pan over medium-low heat 
  • Grease frying pan & ring mold/ mini cake pan with vegetable oil
  • Place mold in centre of frying pan & pour in pancake batter till half full
  • Cover frying pan and leave to cook till bubbles form on top (About 5mins)
  • Gently
  • Cover & cook till bottom is golden brown (About 5mins)
  • Also make sure the inside is no longer runny then

2. Cinnamon Roll Pancakes

This is a cross breed....you won’t know what hit you when you take a bite, a pancake or a cinnamon roll? And if you are a cheese lover, the cream cheese frosting will definitely help you love this. Super sweet and indulgent, there’s a 60% chance you would love this as a non-pancake lover!

Recipe

INGREDIENTS

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 Tablespoon oil
  • 2 eggs
  • 1 stick butter, melted
  • 4 Tablespoons brown sugar
  • 1 Tablespoon cinnamon powder 
  • 4 Tablespoons butter 
  • 2 Tablespoons cream cheese
  • 5 Tablespoons powdered sugar

INSTRUCTIONS

Step 1: Prepare Cinnamon Filling

  • Mix butter, brown sugar and cinnamon in a bowl
  •  Pour mix into piping bag (ziplock will do) 
  • Set aside till firm (about 30mins)

Step 2: Prepare Cream Cheese glaze

  •  Melt butter and cream cheese in a bowl using a
  • Whisk until smooth
  •  Whisk in powdered sugar, little at a time
  • Set aside

Step 3: Prepare Pancake batter

  • Mix flour, baking powder and salt in a bowl
  • Stir in mixture of milk, oil and eggs

Step 4: Cook pancake (cinnamon filling will be piped onto pancake in between)

  • If you are using a ziplock, squeeze cinnamon filling to one edge of the bottom then make a small hole at the end using a scissors
  • If you are using a piping bag, you know what to do....
  • Heat greased frying pan over medium-low heat
  • Scoop 1/2 cup pancake batter onto frying pan
  •  Squeeze cinnamon filling onto the top of the pancake in spiral form
  • Flip over when bubbles appear on the surface
  • Cook until golden brown 
  • Repeat process with remaining batter
  • Serve with cream cheese glaze
