Mixed Vegetable Curry Shrimp Spaghetti Recipe

This is one of my favourite meals to make because once you know the basics you can make it however you like. You can use whatever vegetables you like, you can use chicken, all types of meats or sea foods and just go crazy with it. It is so delicious! If you are like myself and do not like the taste of curry to be over powering, you can always minimize the amount of curry you use in the dish.

Tips:

Be careful not to overcook the vegetables, you still want to maintain that crunch. Soggy vegetables are not cute.

Make sure that you do not over boil your spaghetti to the point that the water dries up and the spaghetti gets sticky. Once you drain the water out of the spaghetti, transfer it directly to the skillet using tongs.

Add the spices to your satisfaction; if you like your meals a bit more spicy then add more pepper. For those of us that are sodium conscious, if the Goya spice and Knorr already gives you your desired taste, feel free to eliminate the salt.
