I am still very confused about the amount of mother’s days we have in the World but then, my family will be celebrating this one that comes up on the 11th of March.
It is a day where we celebrate our mothers and make them feel extra special. More like say thank you for being the best creatures ever!
Salaries wouldn’t have arrived so No, I cannot afford to take my mum to some fancy restaurant but I would be making her a beautiful home cooked meal.
Tried out this beef stew recipe a while back and we all fell in love especially because it involves my mother’s favorite beer....Guinness stout!
Best part.....it is taste bud journey to Ireland since I also cannot afford to send her on a real trip *laughs*.... Yes we are talking about The Irish Guinness Stew! Traditionally, the Irish would make this with lamb but I chose to use beef because she loves beef.
I know you want to know if the stew tastes like guinness….No it doesn’t, the beer only makes it more flavorful and hearty! I am pretty excited because cooking with alcohol makes me feel like a pro chef *laughs* And no worries if you do not take alcohol, although I do not know about any substitutes for dark beer, you could just use water instead….

Ingredients
Boneless Beef (cut into 12 chunky pieces)2 brown onions (chopped)2 teaspoon salt2 teaspoon ground black pepper 1 teaspoon minced garlic1 teaspoon white sugar2 Tablespoons groudnut oil1 can of Guinness stout1/2 cup tomato paste6 small carrots (cut into chunky pieces)1/2 cup green onions 2 cubes maggi1 cup chicken stock
Method
Season beef with 1 teaspoon salt, 1 teaspoon black pepper, 1 cube maggi & vegetable oilLeave to marinate (about 30mins)Add marinated beef, onions & garlic to stew pot, stir for about 5mins on medium heat Pour in guinness stout & stir for another 5minsAdd tomato paste, carrot, sugar, 1 teaspoon salt, 1 teaspoon black pepper 1 cube maggi Cover with chicken broth Cook until beef is very tender (about 2hrs) Remove lid of pot and allow stew to reduce till thick as desiredAdd green onions and cook for about 1minServe with steamed basmati rice.
