How to make stir fry seafood fried rice in 10 mins

Fried rice over time has been 'cooked funny'; from it being soggy, to ingredients not well marinated or just flimsy to it not rich and so on, people would rather have their jollof rice than fried rice where in actual fact the latter could be just as awesome.
This stir-fry seafood fried rice doesn't only come out delicious, it is also very fast to make:
Ingredients:
- Rice
- Shrimps
- Calamari
- Prawns (and other seafood you love)
- Carrots
- Spring onions
- Green pepper
- Garlic
- Onion
- Mushroom
- Salt
- Soy Sauce
- Curry
- Thyme
- Seasoning (I use knorr chicken)
Direction
1. After de-veining shrimps, prawns and cleaning all the seafood you want to use, add a little bit of soy sauce. Set it aside.
2. Bring water to boil, add rice, stir then cover and let this boil for a few minutes, let it get just a little bit soft. Then set aside
3. Heat a wok, pour in just enough vegetable oil (measure this against all the ingredients you're frying)
4. Add onions to the oil and stir till it gets a bit brown then gently ease in diced carrots, mushroom, spring onions, diced green pepper and so on then add curry, thyme, salt and other seasoning you want to at this point, making sure to stir continuously (be careful not to mix in seasoning that would alter the colour of the dish e.g some seasoning can turn to red or pink when added to food).
5. Add the shrimps, prawns, calamari etc and keep stirring till every ingredient is evenly distributed. Check to see if the seasoning is enough at this point, otherwise add little to get a delicious taste. Add a drop or 2 of soy sauce. Stir continuously
6. When all looks done, get the ingredients out of the wok and set aside.
7. Rinse the rice with clean running water making sure its well strained
8. Gently add rice to the oil (already marinated with the seasoning and ingredients) and stir continuously.
9. Slowly add in ingredients mixing into the rice and stirring continuously afterwards, leave it covered for a few minutes to steam.
And your stir fry seafood fried rice is ready!
