Are you tired of eating Jollof and Fried Rice and you need something to spice up your party this weekend, then you should try this Oleku Rice from Food and Lens.
It is super easy to make and extra delicious.
2 cups parboiled rice
1lb fresh shrimp, peeled and deveined
1 cup mixture of dried fish and crayfish
2 tablespoon chopped onion
1 fresh tomato, sliced
2 teaspoon chopped garlic
1 chopped habanero pepper or 2 teaspoon crushed chili pepper
1 cup mixture of green peas and diced carrots
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon onion powder
2 tablespoon olive oil
2 tablespoon palm oil
Salt to taste
3 cups water or stock, add more water or stock as needed
Maggi or Knor, optional
Heat olive and palm oil in a skillet and fry onion and garlic at medium heat.
Add the rest of the ingredients, except fresh shrimp, carrots and green peas.
Cook for 15 minutes and add shrimp, diced carrots and green peas.
Cover and cook for 6-20 minutes or till done.
Serve and enjoy!
