It's not too late to celebrate #NationalChickenWingDay
Though National Chicken Wing Day is observed annually on July 29th, you can still indulge the Nigerian way using this spicy Chicken wings recipe.
Ingredients
½ large bell pepper
24 split chicken wings
½ large onion
1 tablespoon cooking oil
2 tablespoons butter and honey
2 tablespoons black pepper (or suya spice)
2 garlic cloves (peeled)
2 knorr stock cubes
Salt – to taste
Black pepper – to taste
Preparation
1. Season the chicken with salt, pepper and stock cubes and set aside to marinate.
2. Put the peppers, onions, oil, butter and garlic in a blender and add 2 tablespoons of water. Blend to a smooth paste.
3. Pour 2 quarters of the puree into the chicken and mix thoroughly. Set aside.
4. Preheat oven to 400 F and line a baking tray with parchment or foil. Arrange chicken pieces on the tray. Bake for 35-40 minutes.
5. Combine the left over marinade with butter on medium heat and cook for 4 minutes. Stir in honey if using and then remove from heat. You can even swap out this marinade for shito sauce.
6. Remove the chicken pieces from the oven and put them in a bowl. Add the cooked sauce and return to the oven for another 10 minutes to get better colour on.
Your grilled spicy chicken wings are ready! Serve hot, with cold drinks.
