Imagine walking into a michelin-starred restaurant and finding a good, ol' Nigerian recipe on the menu.

This is the dream Iquo Ukoh, Executive Director, Marketing Services, Nestle Nigeria has for Nigerian food.

In an exclusive chat with Pulse TV, Ukoh revealed her passion for creativity with Nigerian food, balancing a career with blogging and more.

Check out excerpts from the interview:

On Food She Specialises In

"I specialise in Nigerian food but with a healthy twist. We know a lot of our food is filled with carbs and oil so when I'm presenting food I'm looking at managing the oil and carbs, it's also about bringing creativity to Nigerian food because I dream of the day I'll be in a top restaurant and Nigerian food will be on the menu."

On Combining A Career And Blogging

"Passion is what drives me to work at midnight when I should be sleeping. I've lost my social life in the past 2 years because of the blog but I enjoy every minute of it. So I do my job and my side hustle, but this side hustle is to express my creativity through food."

Favourite Recipe

"It's an Efik dish called . It's a one-pot dish made from cocoyam and wrapped in cocoyam leaves. It's a meal to die for really."

Disastrous Kitchen Moment

"As a food bloger, so many things go wrong and what you get to see on Instagram is what went right. But there was this time I had this concept of eko and efo riro. So I made the eko cup to put the efo riro inside, and normally eko will stay stable if it is cold. But when I scooped the efo riro into the eko, the whole thing just disintegrated into the plate. I knew then that to put efo riro into eko plates, the efo riro has to be just warm. That was just one of the many disasters behind the camera."
