In minutes, you could have this sandwich off the pan and in your belly. All you need are hard-cooked eggs with some Dijon mustard, fish oil, and spice to add a nice kick for your taste buds. Whatever you have the rest of the day, you’ll be satisfied and fueled for anything that is thrown your way.
What You Need:
2 hard-cooked eggs
4 hard-cooked egg whites
1 heaping Tbsp Dijon mustard
1 tsp supplemental fish oil (optional)
Dash of ground black pepper
dash of smoked or regular paprika
2 slices Ezekiel 4:9 Organic Sprouted 100% Whole Grain Flourless Low Sodium Bread, lightly toasted
1 box (1.5 ounces) seedless raisins
How To Make It:
In a large bowl, combine the eggs, egg whites, mustard, and fish oil (if using).
Using a potato masher, mash into small pieces.
Add the pepper and paprika. Stir until well mixed.
Spoon the egg salad mixture onto one of the toast slices and top with the remaining toast slice.
Serve the raisins on the side to help boost glycogen-replenishing carbs.
