Beer in your salad? Sounds too good to be true. But trust us, this is one case where you can have your cake and eat it too.

This beer-infused dressing gives basic spinach and arugula salad a sweet-and-sour kick, making it easier to fill up on the leafy greens that provide your body with a host of vitamins and minerals.

As a bonus, topping your salad with hard boiled eggs adds protein, which helps fill you up without weighing you down.

What You Need:

For the salad

  • 3 cups spinach

  • 4 cups arugula

  • 1 red bell pepper, chopped

  • 4 hard-boiled eggs

  • 3 oz crumbled feta cheese

  • 1/2 cup pecans, chopped

For the dressing

  • 1/4 cup orange juice

  • 2 tbsp lime juice

  • 1/2 cup lambic beer

  • 1 1/2 tbsp brown sugar

  • 1 tsp fennel seeds

  • 1/2 tsp ground coriander

  • 1/8 tsp ground cayenne

  • Salt to taste

How to Make It:

  1. To make the dressing, place orange juice, lime juice, beer, brown sugar, fennel seeds, coriander, cayenne, and salt in a blender and process until smooth.

  2. To make the salad, combine arugula, spinach, and bell pepper in a large bowl.

  3. Divide salad among 4 serving plates and top with egg slices (1 sliced egg per plate), feta, and chopped pecans. Drizzle beer dressing on top.

Per serving: 261 calories, 12g protein, 15g carbs (3g fiber), 19g fat
