How to make peppered chicken

Nigerians love spicy food, and spiced chicken is one of their favourites.

It is simply spicy red and super hot chicken prepared with a lot of pepper. Here is how to prepare this finger-licking delicacy:

Ingredients

- One kg of chicken

- Two large bell peppers (tatashe)

- Two Scotch bonnet peppers (rodo)

- Sliced onions

- One cooking spoonful of vegetable oil

- Salt and seasoning cubes

- Thyme

Preparation

1. Clean the chicken and season thoroughly with thyme, onions, salt and stock cubes. Cover and leave in the fridge to marinate for about an hour.

2. While waiting for the chicken to marinate, remove the seeds from the peppers and blend into na coarse paste.

3. When the chicken is well marinated, put in a pot, add some water and cook.

4. After cooking, take out the chicken and grill in the oven at 180°C till it is a golden hue all over.

5. Put the vegetable oil in a dry pot and set to medium heat on your cooker.

6. Pour in the pepper and fry till the water dries up.

7. Add in the grilled chicken.

8.  Stir thoroughly with a spatula until the red pepper coats every part of the chicken.

9. Serve as desired!
